I came across a network in which all laptops were connected to docking stations. Would it be possible to use hardware keyloggers or something like that to hack a laptop that is connected to such a docking station?

Not that i know of. On a PC you could get away with having a little gadget in the back of the PC as no one is likely to look behind the PC. However, any protruding items on a docking station would be noticed right away..
I would opt for more stealth:

There are small usb pens (I belive I´ve read it somewhere) that do that and I knew that there were some sort of hardware that was connected between the keyboard and the PC/laptop/docking-station (something like a PS2 connector).
