For those who doesn't want their root password on Kali Linux live USB persistent login to be reset to the default 'toor',

Easy

Once you have changed your password using passwd root command, edit /lib/live/config/0031-root-password and comment out the line

before: usermod -p 'X014elvznJq7E' root

after: # usermod -p 'X014elvznJq7E' root
