Is it possible to boot a computer from an USB, get all the information you need (Files or maybe passwords), store them on the USB, shut the computer down and leave like nothing happend? I think this is possible with Kali Linux but is there also an automated process? and is it also possible to put mallware on the computer?
and can this be prevented, for instance disable the other boot options or have some weird antivirus installed on your computer.
I am really curious because the only thing i could find was a USB that acted as a keyboard.

You can recover the data with any type of linux
All that you mentioned can be done...
You can use a live kali linux USB and mount any partition of the computer then get everything you want.
For preventing it you can enter the BIOS, there's many options that will help you like disabling USB boot.
I like the fact that you're curious and that's why you should do some research on your own... Then ask anything that you can't understand :)
